Hungarian Sweet & Sour Cabbage Soup

Nothing like soup for comfort.

A little olive oil
1 large onion, chopped
1/2 of a large head of cabbage, in bite-size chunks
2 large cloves garlic
3 small cans chicken stock
1/4 cup balsamic vinegar
2 tablespoons brown sugar
1 can stewed or diced tomatoes, Italian seasoning blend (cut pieces of tomato small)
1/2 teaspoon red pepper or more, to taste

Sauté the onions a few minutes, add the cabbage and garlic and saute a few minutes longer. Add  the rest of the ingredients, bring to boil and simmer about 45 minutes. Salt to taste.
