Arlene's Chicken with Orange Rice


 

Arlene’s Chicken & Orange Rice (Revised and re-revised)

1 Rotisserie Chicken, bones and skin removed (use as much or as little as you prefer).  
Do not use barbecue flavored chicken

2 large stalks Celery, diced
1 medium Onion, diced
½ lb. Mushrooms
¾ cup Pecans, toasted
1 pkg. Long Grain & Wild Rice (Uncle Ben’s Original Recipe - make substituting 1 cup orange juice for one cup of the water)
An additional 1/2 to 3/4 cup orange juice concentrate
Salt & Pepper to taste

two or three minced green onions for garnish

1 large can Mandarin Oranges

Brown the mushrooms, remove. Saute Celery, Onions until translucent. Make Uncle Ben's Rice, substituting one cup orange juice for one cup of the water. Mix everything together except oranges and green onions. Heat until piping hot. Adjust flavors & seasonings.

Sprinkle with minced green onions . Surround with cold Mandarin Oranges and serve.
